Pandan Waffles

This morning, I woke up wanting to treat baby to some pandan waffles.

I used my DASH mini waffle maker. I bought a set of two (waffle maker and griddle) on Amazon for $25.

They turned out cute sized and delicious!

My baby is a picky eater, so I was pleasantly surprised to see he ate a whole waffle without fighting (granted, it took him an hour to finish it but I consider this a win)! For those of you frustrated with your toddler being picky with food like me, it helps to tell myself that he’s exercising his rights and is a selective eater. I mean, you wouldn’t want to continue shoving down terrible food yourself, would you?

Because I abhor those recipe blogs with a shit ton of writing and thousands of ads, here’s the recipe:

INGREDIENTS

  • 1 cup premixed waffle flour
  • 1 egg
  • 3/4 cup oat milk
  • 1/8 cup granulated white sugar
  • 1/4 teaspoon pandan extract
  • cooking spray to grease waffle iron

INSTRUCTIONS

  1. In a large bowl, combine waffle flour, egg, oat milk, sugar, and pandan extract and mix thoroughly (pro tip: use storage containers to mix the batter so you can easily refrigerate leftover batter for the next day).
  2. Preheat and grease waffle iron with cooking spray.
  3. Ladle about 2 spoonfuls of batter onto the preheated waffle iron. Close lid and cook until light goes off (about 2-3 minutes).

  4. Enjoy!
